Daintree Ecolodge is a boutique accommodation nestled in the heart of the World Heritage-listed Daintree Rainforest. Believed to be over 180 million years old and the oldest tropical lowland rainforest on earth, the Daintree Rainforest is a rare and precious botanical treasure, giving our travellers a truly unique experience.
The Opportunity
We are looking for a highly talented and passionate Sous Chef to join our award-winning team, in a restaurant set in the rainforest with a spectacular view of the Daintree, who can bring your love and expertise of fine food to elevate the dining experience to new heights for the region. The Lodge caters for up to 60 guests, with eco-friendly ‘bayans’ immersed in the canopy, a private waterfall, and dedicated rainforest walks. Our Julaymba restaurant is at the heart of our ecolodge and is open daily for breakfast and dinner, serving gourmet meals amongst a beautiful rainforest to offer the very best of contemporary cuisine.
As our Sous Chef, you will support our Head Chef to ensure the high standard of the kitchen with daily preparation and running of service. You'll be responsible for delivering an innovative and appealing food offering with a focus on seasonal, local and indigenous ingredients. You'll take responsibility for completing health and safety logs and inspecting incoming goods for quality, all whilst providing our amazing guests with exceptional customer service to ensure a culinary experience to remember!
This is a full time role based on site in our Daintree Ecolodge.
We’d love to hear from you if you:
- Have proven work experience as a Sous chef (or similar) in high-end restaurants or solid experience as a Chef de Partie looking for your next step.
- Are a team player with a positive attitude and a desire to bring fresh exciting ideas
- Hold excellent technical knowledge and experience in all cooking techniques and styles.
- Know how to manage your time, are highly organised, and work well under pressure
- Are skilled in Catering for dietaries without compromising on enjoyment.
